Easy Gluten Free Black Sesame Strawberry Mochi Donuts

I love fresh mochi donuts, slightly crispy on the exterior and chewy on the center. Ever since I discovered the 3 ingredient bagel, I wanted to test adding a plant based yogurt into my mochi donuts! To my surprise it works! I’m still perfecting the recipe but wanted to share for those who wanted to try it.

Ingredients

1 cup of Mochiko Rice Flour

1/2 cup coconut sugar

1 tsp baking soda

1 pasture-raised egg

1 cup of siggi’s strawberry coconut yogurt (5.3 ounces) or mango coconut yogurt

1/6 cup of oat milk

1/4 cup of butter

1 tsp salt

1/8 cup of ground black sesame

6 inch donut pan

Steps

  • Preheat oven to 350 F

  • Combine the rice flour, sugar, ground black sesame and baking soda together.

  • Melt the butter and mix in.

  • Stir in the egg yolk, yogurt, and butter.

  • Whisk the egg whites until thick peaks. Fold into batter

  • Fill up the donut wells to the top and be sure to leave the center empty

  • Bake for 28-32 minutes

  • Transfer to a rack to cool! Enjoy
